Piquant Turkey-Wild Rice Salad (No Mayo)

Ingredients

    1. 1 cup wild rice, cooked and rinsed with cold water
    2. 1 cup barley, cooked and rinsed with cold water
    3. 2 1/2-3 cups cooked turkey, chopped
    4. 1 small onion, chopped
    5. 2 cups cooked green beans, cut into 1 inch lengths
    6. 1 medium bell pepper, chopped ( any color)
    7. 2 tablespoons fresh parsley, finely chopped
    8. black pepper, to taste

    dressing

    1. 2 tablespoons honey mustard
    2. 1/4 cup balsamic vinegar
    3. 1/3 cup olive oil

Directions

  1. Mix together the rice and barley in a large salad bowl.
  2. Toss with the turkey, onion, beans, parsley and pepper.
  3. Shake the dressing ingredients in a covered jar and toss with the salad to coat.
  4. Serve immediately or refrigerate until serving.
