Clean out the Fridge Pasta Sauce

Ingredients

    1. 2 tablespoons oil
    2. 1 onion, sliced
    3. 2 cloves garlic
    4. 4 slices bacon, sliced
    5. 1/2 cup white wine
    6. 2 anchovies, chopped
    7. 1/2 cup sliced red capsicum
    8. 2 tablespoons tomato paste
    9. 1 (400 g) cans crushed tomatoes
    10. 20 green olives
    11. 2 tablespoons chopped fresh basil
    12. fresh ground black pepper
    13. parmesan cheese, to serve

Directions

  1. Heat the oil in a fry pan, add the onion and cook until softened (about 5 minutes); add the garlic and cook for a couple of minutes more.
  2. Add the bacaon and cook a further 5 minutes, then add the wine, andchovies, capsicum, tomato paste, tinned tomatoes and olives and cook a further 10 minutes.
  3. Just before serving, stir through the basil, black pepper, then serve over the pasta of your choice.
  4. Sprinkle with grated parmesan cheese to serve.
