Crock Pot Chicken Cacciatore

Ingredients

    1. 1 1/2 lbs skinless chicken thighs, thawed
    2. 1 (28 ounce) cans Italian-style stewed tomatoes
    3. 1 small green pepper, chopped
    4. 1 small onion, chopped
    5. 1 small zucchini, chopped
    6. 2 garlic cloves, minced (optional)

Directions

  1. Combine all ingredients in crock pot, stir to mix.
  2. Simmer on low for 8 to 10 hours, or on high for 6 hours.
  3. Serve over brown rice or any type of pasta/noodle.
  4. Note: Bone-in chicken thighs can be used but boneless is easier; 1-1/2 lbs should be about 8 thighs.
