Hawaiian Coffee Cake

Ingredients

    1. 532.32 ml flour
    2. 7.39 ml cinnamon
    3. 3.69 ml nutmeg
    4. 354.88 ml brown sugar
    5. 118.29 ml shortening
    6. 177.44 ml chopped nuts ( I use Macademia nuts)
    7. 3.69 ml baking soda
    8. 354.88 ml buttermilk
    9. 236.59 ml coconut, shredded

Directions

  1. Sift together flour, cinnamon and nutmeg.
  2. Add and mix until crumbly the brown sugar and shortening.
  3. Reserve 3/4 cup of this mixture.
  4. Add the chopped nuts, baking sode and buttermilk.
  5. Mix enough to blend.
  6. Bake in greased 8x8x2 pan.
  7. Sprinkle with reserved 3/4 cup sugar-shortening crumb mixture and cover lavishly with coconut.
  8. Bake in 350 degree F oven for 50 minutes or finger test for doneness.
