Shrimp Toast

Ingredients

    1. 1/2 lb shrimp, shelled and deveined
    2. 4 water chestnuts, chopped
    3. 1 teaspoon salt
    4. 1 egg
    5. 6 slices white bread, thinly sliced
    6. oil ( for frying)
    7. 2 tablespoons cornstarch
    8. 1 egg white
    9. 1/2 teaspoon sugar

Directions

  1. Mince shrimp.
  2. Add water chestnuts, salt, sugar, 1 Tbls.
  3. cornstarch and 1 egg.
  4. Beat egg white and blend in 1 Tbls.
  5. cornstarch.
  6. Remove crusts from bread and cut into 4 triangles.
  7. Brush one side of bread with egg white mixture and then shrimp past.
  8. Fry shrimp side down in 375degree F.
  9. oil until golden.
  10. Carefully turn and brown bread side.
  11. Drain.
  12. Serve hot.
