My Sweet Potato Pie 1981

Ingredients

    1. 2/3 cup white sugar
    2. 1/2 teaspoon salt
    3. 1 1/2 teaspoons cinnamon
    4. 1/2 teaspoon ground ginger
    5. 1/2 teaspoon ground nutmeg
    6. 1/4 teaspoon ground allspice
    7. 1/4 teaspoon ground cloves
    8. 2 large eggs, beaten
    9. 1 1/2 cups mashed cooked sweet potatoes ( no seasoning)
    10. 2/3 cup evaporated milk ( carnation)

    Topping

    1. 1/2 cup brown sugar
    2. 6 tablespoons melted butter
    3. 1 cup chopped pecans

Directions

  1. Pre heat oven to 425 degrees.
  2. Line a glass pie pan with your favourite pastry.
  3. Mix all ingredients in a large bowl, until well combined.
  4. Pour into unbaked crust and bake 15 minutes.
  5. Lower oven temp.
  6. to 350 degrees F.
  7. and bake another 25 minutes.
  8. After the 25 minutes.
  9. Combine all the topping mixture and spread over the hot pie.
  10. Return to oven and bake at 350 degrees F.
  11. for another 15 minutes.
  12. Total baking time should be 50 minutes.
  13. Test with a knife to make sure pie is firm and cooked thru.
