Italian Potato Salad

Ingredients

    1. 5 -6 medium red potatoes, cooked and cut into 1 inch pieces
    2. 2 cloves garlic, minced
    3. 1/2 cup chopped red onion
    4. 3 -4 plum tomatoes, quartered
    5. 1/3 cup olive oil or 1/3 cup vegetable oil
    6. 3 -4 fresh basil leaves, chopped
    7. 1 (5 3/4 ounce) jars stuffed olives, drained and halved
    8. 1 teaspoon dried oregano
    9. 1 1/2 teaspoons salt ( I omitted this)
    10. 1/4 teaspoon pepper
    11. lettuce leaf (optional)

Directions

  1. In a large bowl, combine ingredients except lettuce; toss to coat.
  2. Cover and refrigerate until serving.
  3. Serve in a lettuce-lined bowl if desired.
