Pumpkin Cornbread

Ingredients

    1. 1 1/4 cups flour
    2. 1 tablespoon baking powder
    3. 1/2 teaspoon salt
    4. 1 teaspoon coriander
    5. 3/4 cup yellow cornmeal
    6. 2/3 cup brown sugar
    7. 2 tablespoons honey
    8. 1/4 cup butter, melted
    9. 2 eggs, beaten
    10. 3/4 cup canned pumpkin
    11. 2/3 cup buttermilk

Directions

  1. Sift together flour, baking powder, salt and coriander in a large mixing bowl; stir in cornmeal.
  2. In a separate bowl, combine brown sugar, honey, melted butter, eggs, pumpkin and buttermilk.
  3. Gradually stir into the dry mixture until all ingredients are blended; do not overmix.
  4. Pour batter into a square 8-inch baking pan and bake in 350 degree oven 40-45 minutes.
