Creamy Dijon Cheesy Cauliflower

Ingredients

    1. 1 lb cauliflower, cut into florets
    2. 2 tablespoons butter
    3. 2 tablespoons all-purpose flour
    4. 1 1/4 cups warm milk
    5. 1 teaspoon Dijon mustard
    6. 1/2 cup grated parmesan cheese
    7. 3/4 cup shredded cheddar cheese
    8. 2 tablespoons breadcrumbs

Directions

  1. Grease a shallow baking dish.
  2. Cook the cauliflower in a saucepan of lightly salted water just until tender.
  3. Drain, then place in the greased dish, keep warm.
  4. Melt the butter in a saucepan, add flour and cook for 1 minute stirring constantly.
  5. Remove from heat, then whisk in milk, and mustard.
  6. Return to heat and bring to a boil, stirring constantly.
  7. Cook, stirring, over low heat for 2 minutes.
  8. Remove from heat.
  9. Add parmesan and 1/2 cup of the cheddar cheese and stir until melted.
  10. Season to taste with salt and pepper.
  11. Pour cheese sauce over the cauliflower.
  12. Combine the bread crumbs and remaining cheddar and sprinkle over the cauliflower.
  13. Cook under a broiler until the top is browned and bubbling.
