Spinach and Ricotta Pie

Ingredients

    1. 1 (10 ounce) packages frozen chopped spinach
    2. 1/2 cup grated parmesan cheese or 1/2 cup romano cheese
    3. 2 lbs ricotta cheese
    4. 3 eggs
    5. 1/8 teaspoon ground pepper
    6. 1/2 teaspoon salt
    7. 1 8 inch pie shell

Directions

  1. Thaw spinach and drain thoroughly, do not cook it.
  2. Preheat oven to 350°F.
  3. In a large bowl, combine spinach with remaining ingredients (except crust) mixing well.
  4. Spoon mixture into pie crust.
  5. Bake at 350°F for about 30 minutes, or until set in center.
  6. Can be served hot or cold.
  7. For a variation, add some diced ham, prosciutto or cooked crumbled bacon to the spinach/cheese mixture before baking.
