Lobster-Scallop Sesame Salad

Ingredients

    1. 1/2 lb cooked lobster meat
    2. 1/2 lb cooked scallops
    3. 1/2 lb snow peas
    4. 1/2 head napa cabbage
    5. 1/2 jicama
    6. 4 medium carrots
    7. 4 green onions
    8. 1 sweet yellow bell pepper
    9. 2 teaspoons sesame seeds
    10. 2 teaspoons black sesame seeds
    11. 6 tablespoons rice vinegar
    12. 1/4 cup soy sauce
    13. 2 tablespoons superfine sugar
    14. 2 teaspoons sesame oil
    15. 2 teaspoons minced fresh gingerroot
    16. 1 clove garlic, minced

Directions

  1. Cut lobster meat and scallops if large into bite sized pieces and place in a large salad bowl.
  2. Trim peas and diagonally cut into 1/4 inch slices.
  3. Julieen the cabbage, jicama, carrots and yellow pepper, adding to the bowl.
  4. Slice the green onions into 1/2 inch slices.
  5. In a dry hot skillet toast sesame seeds for 1-2 minutes and transfer to a small bowl to cool.
  6. In another bowl whisk together the vinegar, soy sauce, sugar, sesame oil, ginger and garlic.
  7. Pour over salad and toss well.
  8. Sprinkle on the sesame seeds, toss again and serve.
