Coconut Basmati Rice

Ingredients

    1. 1 1/4 cups water
    2. 1 cup white basmati rice, rinsed well
    3. 1/2 cup coconut milk
    4. 1/2 teaspoon turmeric
    5. 1/4 teaspoon salt ( or to taste)
    6. 1 piece cinnamon stick ( 1 1/2 inches)
    7. 1/4 cup currants or 1/4 cup raisins
    8. 1 dried chili

Directions

  1. In a saucepan, add water; bring to a boil.
  2. Add the rice and remaining ingredients; stir to combine.
  3. Return to a boil.
  4. Stir, cover; reduce heat to low, and simmer for 15 minutes.
  5. Remove cinnamon stick and dried chile.
  6. Stir to fluff the rice and stir.
