Chickpea Salad

Ingredients

    1. 1 (20 ounce) cans chickpeas, rinsed and drained
    2. 1 red onion, diced
    3. 1 stalk celery, diced
    4. 1 red pepper, diced
    5. 1 tablespoon cilantro, chopped
    6. 1 tablespoon parsley, chopped
    7. 1 tablespoon mint, chopped ( you can use one or all)
    8. 2 garlic cloves, minced
    9. 1/2 cup extra virgin olive oil
    10. 1 tablespoon balsamic vinegar
    11. salt and pepper

Directions

  1. Mix first 4 ingredients in a bowl.
  2. Add rest of ingredients chill 1 hour to overnight and serve.
