Baked Greek Vegan Chicken-Free Strip Salad

Ingredients

    1. 1 (12 ounce) packages vegan chicken, free strips
    2. 2 teaspoons all purpose Greek seasoning, Recipe # 425441
    3. 1 lemon, juice of
    4. 1/4 cup olive oil
    5. 16 ounces Lettuce
    6. 1 tomato, diced
    7. 1 cucumber, peeled and diced
    8. 1 onion, diced
    9. 2 ounces extra firm tofu, crumbled
    10. 1/4 cup black olives
    11. 16 ounces fresh Baby Spinach

    DRESSING

    1. 1 lemon, juice of
    2. 2 tablespoons olive oil

Directions

  1. Place Chicken-Free Strips in a baking dish.
  2. Sprinkle with spice mixture, Greek Seasoning Mix.
  3. Mix together lemon juice and melted butter; pour over chicken.
  4. Bake as directed on the Chicken-Free Strips package, basting occasionally, until done.
  5. Toss lettuce, tomato, cucumber, onion, firm tofu, black olives, and fresh spinach. Cover with the cooked Chicken-Free Strips.
  6. Mix lemon juice and oil and pour over salad.
