Ingredients

    1. 15 ounces black-eyed peas, canned rinsed, drained
    2. 14 1/2 ounces diced fire-roasted tomatoes, well drained
    3. 1/4 onion, chopped
    4. 1/2 fresh jalapeno pepper, minced
    5. 1 tablespoon lime juice ( or lemon juice)
    6. 1/2 teaspoon ground cumin
    7. 1 garlic clove, chopped
    8. 1 tablespoon cilantro
    9. salt and black pepper

Directions

  1. Combine all ingredients. Let stand 20-30 minutes before serving.
