Couscous, Corn and Lima Bean Saute

Ingredients

    1. 1 tablespoon butter or 1 tablespoon margarine
    2. 1 large onion, chopped ( 1 cup)
    3. 1 garlic clove, finely chopped
    4. 1 (12 ounce) boxes whole wheat couscous
    5. 1 (9 ounce) boxes frozen whole kernel corn, thawed
    6. 2 (9 ounce) boxes frozen baby lima beans, thawed
    7. 2 cups water
    8. 1 teaspoon dried thyme
    9. 1 teaspoon salt
    10. 1/3 cup slivered almonds, toasted

Directions

  1. In a 12" skillet, melt butter over Medium-High heat.
  2. Add onion and garlic; cook about 2 minutes, stirring occasionally, until onion is crisp-tender.
  3. Stir in remaining ingredients except almonds.
  4. Heat to boiling over High heat.
  5. Remove from heat; let stand 5 minutes.
  6. Fluff before serving.
  7. Sprinkle with almonds.
