Texas Chili

Ingredients

    1. 2 tablespoons olive oil
    2. 3 lbs chuck roast
    3. 1 quart water
    4. 1 chopped onion
    5. 10 crushed garlic cloves
    6. 1 (14 ounce) cans diced tomatoes
    7. 4 tablespoons chili powder
    8. 1/2 teaspoon cayenne pepper
    9. 3 tablespoons cumin
    10. 3 tablespoons paprika
    11. 1 teaspoon oregano
    12. 1 teaspoon salt
    13. 1 tablespoon sugar
    14. 3 tablespoons flour
    15. 6 tablespoons cornmeal
    16. 1/2 cup water

Directions

  1. Grind roast for chili meat and sear in olive oil until gray, not brown.
  2. Stir in chopped onion and one quart water. Bring to a bubbling simmer and let simmer 1 1/2 hours.
  3. Add all other ingredients except flour, cornmeal and water. let simmer for 3 hours.
  4. Mix flour and cornmeal in 1/2 cup water and add to pot. Let simmer 30 more minutes. taste to see if more water or salt is needed.
  5. Works beautifully in a crockpot as well.
