6 ounces cream or 6 ounces
lemon peel, grated
1 -2 tablespoon
sweet cherries, pitted
( fresh or drained canned)
butter, for greasing the pan
- Preheat the oven to 350F or 180°C.
- Place the eggs and sugar in a large bowl and mix together. Sift the flour into the egg mixture and whisk well. Stir in cream (or crème fraîche), milk, zest, salt and brandy. Rest for 10 minutes.
- Lightly butter a large baking dish and sprinkle with sugar to coat. Scatter the cherries in the dish, then pour in the batter.
- Bake for 20-30 minutes, until it is light brown and firm in the middle. Remove from the oven and allow to cool a little before serving.
- Good with whipped cream.
