Sweet Potato & Pecan Casserole

Ingredients

    1. 40 ounces sweet potatoes, peeled and cubed
    2. 1/2 cup apple juice
    3. 1/3 cup butter, melted and divided
    4. 2 tablespoons butter, melted and divided
    5. 1/2 teaspoon salt
    6. 1/2 teaspoon cinnamon
    7. 1/4 teaspoon black pepper
    8. 2 eggs, beaten
    9. 1/3 cup pecans, chopped
    10. 1/3 cup brown sugar
    11. 2 tablespoons flour

Directions

  1. Lightly grease 4 1/2 quart crock pot.
  2. Combine sweet potatoes, apple juice, 1/3 cup butter, salt, cinnamon and pepper in a large bowl.
  3. Beat in eggs.
  4. Place mixture into crock pot.
  5. Combine pecans, brown sugar and 2 tbsp butter in a small bowl and spread over sweet potatoes.
  6. Cover, cook on high 3-4 hrs, or on low for 7 to 8 hours.
