Delicious, Versatile and Simple Rice Salad

Ingredients

    1. 1 cup white rice
    2. 1 (15 ounce) cans black beans ( well rinsed)
    3. 1 red onion, chopped
    4. 1 chopped tomato
    5. 1 raw corn on the cob, corn cut off cob
    6. 1 bunch chopped parsley
    7. 1 bunch chopped cilantro
    8. 1/4 cup lemon juice
    9. 1/4 cup olive oil
    10. 1 teaspoon salt
    11. 1/2 teaspoon cumin

Directions

  1. Cook the rice using your prefered method.
  2. Mix with the veggies, parsley, cilantro and beans.
  3. Mix lemon juice, olive oil, salt, and cumin and stir the mixture into the rice.
