Avocados Stuffed With Tuna

Ingredients

    1. 4 large avocados, slightly firm
    2. 2 (6 1/2 ounce) cans tuna in water, drained
    3. 5 tablespoons mayonnaise, light
    4. 1/2 lemon, juice
    5. 1 red apple, cut in small cubes
    6. 1 stalk celery, finely chopped
    7. 1/2 cup pecans, finely chopped

Directions

  1. Cut avocados in half. Remove the pit and separate some of the pulp from the center.
  2. Mix the pulp separated with all the ingredients and fill the avocado halves.
  3. Serve with crackers and pickled jalapeño peppers, if desire.
