Sausage Bean Soup

Ingredients

    1. 3/4 lb bulk Italian sausage
    2. 1/2 cup chopped onion
    3. 1 garlic clove, minced
    4. 1 (15 1/2 ounce) cans butter beans, rinsed and drained
    5. 1 (15 ounce) cans black beans, rinsed and drained
    6. 1 (14 1/2 ounce) cans diced tomatoes, undrained
    7. 1 (14 1/2 ounce) cans beef broth
    8. 1 tablespoon minced fresh basil or 1 teaspoon dried basil
    9. 2 tablespoons shredded parmesan cheese
    10. salt and pepper

Directions

  1. In a large saucepan, cook sausage, onion and garlic until the sausage is browned.
  2. Drain.
  3. Add beans, tomatoes, broth, basil, salt and pepper (if desired).
  4. Cover and simmer for 10 minutes.
  5. Sprinkle each serving with Parmesan Cheese.
