Ingredients

    1. 118.29 ml chopped lean ham
    2. 118.29 ml chopped onion
    3. 118.29 ml green bell pepper
    4. 118.29 ml chorizo sausage, optional
    5. 14.79 ml olive oil
    6. 2 clove garlic, minced
    7. 4.92 ml ground cumin
    8. 1 (538.64 g) can red kidney beans, rinsed
    9. 1 (226.79 g) can unsalted tomato sauce
    10. 14.79 ml Tabasco sauce
    11. 473.18 ml uncooked white rice
    12. 2.46 ml salt

Directions

  1. Over medium heat, heat oil in a large saucepan.
  2. Add ham, chorizo, onion and green pepper, garlic and cumin.
  3. Sauté until vegetables are tender.
  4. Add beans, tomato sauce and Tabasco sauce.
  5. Simmer for 5 minutes.
  6. Add in remaining ingredients and 4 cups water.
  7. Bring to boil.
  8. Reduce heat, cover and simmer until rice is tender.
