Ingredients

    1. 1/2 cup butter, softened
    2. 3/4 cup sugar ( can reduce the sugar a few tablespoon if desired)
    3. 2 large eggs
    4. 1 1/2 teaspoons vanilla
    5. 2 medium ripe bananas, mashed
    6. 2 cups all-purpose flour
    7. 1 teaspoon baking powder
    8. 1/2 teaspoon baking soda
    9. 1/2 teaspoon salt
    10. 1/2 teaspoon cinnamon ( optional, can use more)
    11. 1 -1 1/2 cup blueberries ( fresh or unthawed frozen)
    12. glaze (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. Set oven rack to second-lowest position.
  3. Grease three mini loaf pans.
  4. In a medium mixing bowl cream the butter with sugar (about 2 minutes).
  5. Add in eggs and vanilla; continue beating for another 2-3 minutes or until no sugar granules remain.
  6. On low speed mix in the mashed banana until blended.
  7. In a small bowl combine the flour with baking powder, baking soda, salt and cinnamon; add to the creamed mixture just until blended (do not over mix).
  8. Mix in the blueberries.
  9. Divide the batter evenly between the 3 loaf pans.
  10. Bake in a preheated oven for about 30-35 minutes or until the loaves test done.
  11. Cool slightly in pan then remove to wire racks to cool completely.
  12. Drizzle with glaze if desired.
