Protein-Powered Whole Wheat Pumpkin Muffins

Ingredients

    1. 1/4 cup margarine
    2. 1 cup brown sugar
    3. 1/2 cup applesauce
    4. 2 cups pumpkin puree
    5. 1 teaspoon cinnamon
    6. 1 teaspoon nutmeg
    7. 2 cups whole wheat flour
    8. 1/2 cup vanilla whey protein powder
    9. 1/4 cup flax seed ( or more, to taste)
    10. 2 teaspoons baking soda

Directions

  1. Cream together margarine and sugar.
  2. Add applesauce, pumpkin, and spices. Mix well.
  3. Add flour, protein powder, flaxseed and baking soda.
  4. Preheat oven to 350°F Spray PAM or equivalent on muffin tray.
