Sweet Potato and Kale Soup

Ingredients

    1. 5 ounces fresh kale
    2. 3 (14 ounce) cans cannellini beans, drained and rinsed
    3. 2 1/2 lbs sweet potatoes, peeled and cubed
    4. 3 (14 ounce) cans campbells vegetable broth
    5. 1 onion, chopped
    6. 2 carrots, peeled and chopped
    7. 3 teaspoons italian seasoning
    8. 2 teaspoons olive oil
    9. 10 garlic cloves, minced
    10. 1/2 teaspoon salt
    11. 1/2 teaspoon black pepper

Directions

  1. cut and discard the thick green ends of kale.
  2. chop kale.
  3. in a large pot heat olive oil, saute onions and italian seasoning until onions are tender.
  4. add all the other ingreidents, stir.
  5. cover and simmer for 25 minutes.
