Greek Chicken Salad

Ingredients

    1. 3 tablespoons olive oil
    2. 1 lemon ( finely grated peel and juice)
    3. 2 minced garlic cloves
    4. 1 tablespoon oregano
    5. 1/4 teaspoon black pepper
    6. 4 boneless skinless chicken breasts, 6 oz each
    7. nonstick cooking spray
    8. 4 cups romaine lettuce
    9. 1/2 cup reduced-fat feta cheese
    10. 1/4 cup olive, pitted
    11. 1 Spanish onion, sliced

Directions

  1. Combine oil, lemon peel, juice, garlic, oregano, and pepper. Pour marinade over chicken and cover well.
  2. Place in a sealed container and refrigerate overnight.
  3. Spray nonstick cooking pan with nonstick cooking spray.
  4. Cook chicken until no longer pink inside.
  5. Arrange lettuce in salad bowls and combine with olives, feta cheese, and onion.
  6. Serve with chicken on top.
