Low Fat Bread Crumb Chicken

Ingredients

    1. 3 egg whites
    2. 1 tablespoon Dijon mustard
    3. 1 cup breadcrumbs ( or Progresso Italian style Panko)
    4. 1 teaspoon italian seasoning
    5. 1/4 cup reduced-fat parmesan cheese ( grated)
    6. 1/2 cup flour
    7. 4 boneless skinless chicken breasts

Directions

  1. Heat oven to 450 degrees. Place a rack on a baking sheet sprayed with nonstick spray.
  2. Whisk together egg whites and mustard.
  3. Blend bread crumbs, Italian seasoning and cheese in another bowl.
  4. In a third dish, place flour.
  5. Coat chicken with flour, shaking off excess, dip in egg mixture and then in bread crumb mixture.
  6. Bake at 450°F for 15 minutes, turn over and bake another 10 minutes.
  7. Turn oven to broiler and cook for 1 minute.
  8. Serve with heated marinara sauce if desired.
