Ingredients

    1. 8 ounces shredded cheddar cheese
    2. 4 ounces diced pimentos
    3. 1/2 cup mayonnaise
    4. garlic salt
    5. 1/2 teaspoon louisiana hot sauce
    6. 1 tomato, sliced thinly
    7. 8 slices pumpernickel bread
    8. butter

Directions

  1. Mix first 5 ingredients together.
  2. Spread 1/2 cup of cheese mixture on 1 side of 4 slices of the Pumpernickel.
  3. Top each with 2-3 slices of tomato.
  4. Top with remaining bread slices.
  5. In non-stick skillet over medium-high heat, brown both sides of each sandwich in a small amount of butter.
