Fried -Egg and Avocado Sandwich

Ingredients

    1. 2 tablespoons cream cheese, softened
    2. 1 slice whole wheat bread, toasted
    3. 1/2 teaspoon fresh parsley, minced
    4. 1/2 teaspoon green onion, minced
    5. 2 slices bacon
    6. 1 large egg
    7. 1/8 teaspoon salt
    8. 1/4 teaspoon ground black pepper
    9. 2 slices tomatoes
    10. 1/2 avocado, peeled, pitted and sliced

Directions

  1. Spread cream cheese over 1 piece of toast.
  2. Sprinkle with parsley and green onion.
  3. In a small skillet, cook bacon over medium-high heat until crispy. Remove from pan and drain on paper towels. Drain grease from pan, reserving 1 tablespoon.
  4. In same small skillet, fry egg in reserved bacon grease over medium-low heat. Sprinkle with salt and pepper. Place egg over cream cheese mixture. Top with bacon, tomato and avocado.
