Tangerine Muffins

Ingredients

    1. 2 cups flour
    2. 1/2 cup sugar
    3. 2 teaspoons baking powder
    4. 1 teaspoon baking soda
    5. 1/2 teaspoon salt
    6. 1 (8 ounce) cartons vanilla yogurt
    7. 1 egg, lightly beaten
    8. 1/4 cup butter, melted
    9. 2 tablespoons milk
    10. 1 cup diced peeled tangerine
    11. 1 tablespoon grated tangerine peel

Directions

  1. In a bowl, combine first 5 ingredients.
  2. In a small bowl, combine the yogurt, egg, butter and milk until smooth; stir into dry ingredients just until moistened.
  3. Stir in tangerine and peel.
  4. Fill greased or paper-lined muffin cups two-thirds full.
  5. Bake at 400 degrees for 18-20 minutes.
  6. Cool for 5 minutes before removing from pan to wire rack.
