Low Fat and Delicious Banana Raspberry Bread

Ingredients

    1. 1 cup whole wheat flour
    2. 1 cup all-purpose flour
    3. 2/3 cup sugar
    4. 1 tablespoon baking powder
    5. 1/2 teaspoon baking soda
    6. 1/2 teaspoon salt
    7. 1 egg
    8. 1 egg white
    9. 1 teaspoon vanilla
    10. 2 ripe bananas, mashed
    11. 1/4 cup canola oil
    12. 1/4 cup non-fat vanilla yogurt
    13. 1 (16 ounce) packages fresh raspberries

Directions

  1. Preheat oven to 350°.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
  3. Lightly beat egg and egg white. Combine eggs, vanilla, mashed bananas, oil and yogurt. Add wet ingredients to the dry and stir until just moist. Fold in the raspberries and then spoon the batter into a 9"x5" loaf pan coated with cooking spray.
  4. Bake for 55 minutes or until a knife inserted in the middle comes out clean.
