Andouille Sausage Soup

Ingredients

    1. 1 lb andouille sausage
    2. 5 cups beef broth
    3. 1 1/2 cups hot water, divided
    4. 1/4 cup pastina
    5. 15 ounces cannellini beans, drained
    6. 14 ounces diced tomatoes, with juices
    7. 1 small white onion, diced
    8. 1 teaspoon crushed garlic clove
    9. 1/2 teaspoon basil leaves
    10. 1/2 teaspoon thyme
    11. 4 ounces frozen spinach, thawed partially

Directions

  1. Mix together in large pot the broth, 1 cup of water, beans, tomato, onion, and garlic. Heat mixture to a simmer.
  2. Slice and cook sausage in a seperate pan with 1/2 cup water.
  3. Add sausage, spinach,pastina, and spices to pot.
  4. Continue to cook on low heat for 1 hour. Stirring occasionally.
  5. Serve with bread.
