Rabbit's Carrot Bread

Ingredients

    1. 4 eggs
    2. 2 cups sugar
    3. 1 1/4 cups salad oil
    4. 3 cups flour
    5. 2 teaspoons baking powder
    6. 2 cups finely shredded raw carrots

Directions

  1. Beat eggs then gradually add sugar, beating until thick. Gradually add oil and continue beating until thoroughly blended.
  2. In a separate bowl, stir together flour, baking powder, baking soda, salt and cinnamon until thoroughly blended.
  3. Mix dry ingredients into egg mixture until smooth and well blended. Stir in the carrots. Spoon into two well-greased 9x5 inch loaf pans.
  4. Bake in a 350 degree oven for one hour.
