- heat the olive oil in a large heavybased pan. add the onion,carrot and celery and cook, stirring, over medium heat for 5 minutes, or until softened.add the garlicand cook for 1 minute.
- add the mince and cook until well browned. add the stock ,tomatoes wine and sugar.
- bring to the boil, reduce the heat to low and simmer for 2 hours, stirring occasionally. season to taste with salt and pepper. serve with spaghetti.
