Chocolate Fruitcake Cookies

Ingredients

    1. 1/4 cup walnuts or 1/4 cup pecans
    2. 1/4 cup almonds
    3. 1 tablespoon raisins
    4. 1 tablespoon candied citrus peel ( orange and lemon)
    5. 2 ounces butter
    6. 1/4 cup sugar
    7. 1 ounce candied cherry
    8. 1/2 ounce crystallized ginger
    9. 1 tablespoon cream
    10. 1 (18 ounce) boxes chocolate cake mix
    11. 2 large eggs
    12. 1/3 cup vegetable oil

Directions

  1. Finely chop walnuts, almonds, raisins, orange and lemon peel, cherries, and ginger.
  2. Melt butter in a saucepan, then add sugar and stir over low heat until sugar is dissolved.
  3. Bring to a boil and let it boil for 1 minute without stirring (until just turning light golden).
  4. Remove from heat and mix well with cream and fruit-nut mixture.
  5. Mix cake mix with two eggs and oil.
  6. Combine all ingredients.
  7. Scoop a heaping spoonful of dough onto cookies sheet lined with foil.
  8. Bake in a preheated 350 degree oven for 10 - 12 minutes.
