Balsamic Chicken and Spinach

Ingredients

    1. 1 tablespoon olive oil
    2. 3 garlic cloves, Chopped
    3. 2 whole chicken breasts, halved
    4. 8 ounces baby spinach
    5. 2 tablespoons balsamic vinegar
    6. 1/3 cup low sodium chicken broth
    7. 1 cup canned tomato
    8. 2 cups whole wheat couscous, cooked

Directions

  1. Heat pan over medium-high heat.
  2. Add olive oil and garlic, cook 1 minute.
  3. Cook chicken 4 minutes per side or until fully cooked; set aside chicken.
  4. In the same pan cook spinach until wilted (1-2 minutes); set aside spinach.
  5. On medium heat add vinegar and broth to pan, scrape pan to remove the browned bits.
  6. Add tomatoes and simmer for 3-5 minutes.
  7. Serve with couscous topped with spinach, chicken, and balsamic tomato sauce.
