Gluten Free Zucchini Bread

Ingredients

    1. 1/4 cup canola oil
    2. 2/3 cup light brown sugar
    3. 2 eggs
    4. 1 teaspoon vanilla extract
    5. 1/2 cup applesauce
    6. 1 3/4 cups gluten-free flour ( 4 flour blend)
    7. 2 teaspoons baking powder
    8. 1 teaspoon xanthan gum
    9. 1/2 teaspoon salt
    10. 1 1/2 g cinnamon
    11. 1 1/2 cups grated zucchini
    12. 1/2 cup chopped pecans (optional)
    13. 1/2 cup raisins (optional)

Directions

  1. Preheat oven to 350°F.
  2. Grease 9x5 loaf pan.
  3. Combine oil, sugar.
  4. Add eggs, vanilla applesauce & beat.
  5. Add flours, baking powder, xantham gum, salt, and cinnamon.
  6. Stir in zucchini, nuts and raisins.
  7. Bake for 1 hour.
