Crock Pot Curry Split Pea Soup

Ingredients

    1. 16 ounces dried split peas, rinsed, drained and picked over
    2. 1 medium onion, chopped
    3. 6 cups boiling water
    4. 2 1/2 tablespoons curry powder
    5. 6 carrots, peeled and chopped
    6. 2 celery ribs, chopped
    7. 1/4 teaspoon seasoning salt ( to taste)
    8. 1/4 teaspoon fresh ground pepper ( to taste)
    9. 2 cups Canadian bacon, chopped

Directions

  1. Place all ingredients except 1/2 Tbls. of the curry powder in a crock pot.
  2. Cover and cook on low setting for 10 to 11 hours.
  3. Stir in the remaining 1/2 Tbls. curry powder.
  4. Add more seasoned salt and pepper to taste, if needed.
  5. Garnish with chopped chives and croutons.
