Betty Ford's Chinese Pepper Steak

Ingredients

    1. 1 1/2 lbs flank steaks
    2. 4 teaspoons oil
    3. 3 green peppers, cut in 1 1/2 inch pieces
    4. 2 cups water
    5. 1 envelope onion soup mix
    6. 2 teaspoons soy sauce
    7. 1/2 cup sherry wine
    8. 1 teaspoon salt
    9. 1/2 teaspoon pepper
    10. 2 teaspoons cornstarch ( mixed in 4 T water)

Directions

  1. Cut steak lengthwise in 1/2 inch strips.
  2. Heat oil in lg skillet.
  3. Fry steak a handful at a time only long enough to change color.
  4. Remove steak from skillet.
  5. Saute the green peppers.
  6. Bring 2 cups water to a boil in dutch oven.
  7. Add onion soup mix and boil for 5 minutes.
  8. Add steak and peppers.
  9. Simmer for 1/2 hour.
  10. Add soy sauce, salt, pepper and wine.
  11. Add cornstarch mixture and cook until just thickened.
