Ingredients

    1. 1 cup gluten-free flour
    2. 1 teaspoon xanthan gum
    3. 1 teaspoon baking soda
    4. 1 teaspoon baking powder
    5. 1 teaspoon cinnamon
    6. 1/4 teaspoon ground cloves
    7. 1/8 cup sucanat
    8. 1/4 cup unsweetened coconut
    9. 1 cup carrot, grated
    10. 1/4 cup raisins
    11. 1 small mcintosh apple, diced
    12. 2 eggs
    13. 1/2 cup unsweetened applesauce
    14. 1 teaspoon vanilla
    15. 1 teaspoon orange extract
    16. 1/4 cup soymilk

Directions

  1. Preheat oven to 350°F.
  2. Mix dry ingredients.
  3. Mix wet, then add into dry.
  4. Fill cups to about 2/3 cup full.
  5. Bake for about 22 minutes.
