Maple Date Hazelnut Bread

Ingredients

    1. 2 cups whole wheat pastry flour
    2. 1 1/2 teaspoons baking powder
    3. 1 teaspoon cinnamon
    4. 1/2 teaspoon allspice
    5. 1/4 teaspoon ground nutmeg
    6. 1/4 teaspoon ground cloves
    7. 1/4 teaspoon salt
    8. 2 eggs, beaten
    9. 1/4 cup safflower oil
    10. 1/2 cup pure maple syrup
    11. 1/4 cup apple juice
    12. 1 teaspoon grated lemon zest
    13. 1 cup chopped pitted dates
    14. 1/4 cup currants
    15. 1/2 cup chopped hazelnuts

Directions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the flour with the baking powder, spices, and salt.
  3. In another bowl, beat the eggs together with the oil, syrup, juice and lemon rind.
  4. Make a well in the center of the flour mixture and pour in the wet mixture, stir vigorously until thoroughly combined.
  5. Stir in the dates, currants, and hazelnuts.
  6. Pour into an oiled 9x5x3-inch loaf pan. Bake 45 to 50 minutes, or until a knife inserted into the center tests clean. Cool on a rack, then cover tightly with foil to store.
