Simple Garlic Mushroom Pasta

Ingredients

    1. 300 g whole wheat pasta
    2. 1 large yellow onion, sliced
    3. 140 g diced bacon
    4. 300 g mushrooms, cleaned and cut into pieces
    5. 2 -3 garlic cloves, minced
    6. salt & freshly ground black pepper
    7. 250 ml cream
    8. shredded parmesan cheese

Directions

  1. Cook the pasta according to the package instructions.
  2. While the pasta is cooking, fry the bacon - when it starts rendering fat, add the onion, and fry gently.
  3. Add the mushrooms, minced garlic, salt and freshly ground black pepperto taste.
  4. Add the cream, bring to just a boil and let simmer until the pasta is done.
  5. Drain the pasta, (reserving some of the water) and pour the sauce over the pasta and toss together.
  6. Add a little bit of water if you need to loosen it up.
  7. Add the parmesan.
  8. Serve and enjoy.
