Rice Cooker Mexican Rice

Ingredients

    1. 1 cup rice ( I used long grain rice)
    2. 2 1/4 cups low sodium chicken broth
    3. 0.5 (6 ounce) cans tomato paste
    4. 2 tablespoons butter
    5. 1/2 cup onion, diced small
    6. 1 garlic clove, minced
    7. 0.5 (4 ounce) cans diced green chilies
    8. 1 dash pepper
    9. 1 dash red pepper flakes
    10. cilantro or parsley, for color

Directions

  1. combine all ingredients in rice cooker.
  2. cook according to manufacturer instructions.
  3. when cooking time finished let it sit uncovered for 3 minutes or so to thicken.
  4. stir before serving.
