Ingredients

    1. 3 tablespoons rice vinegar
    2. 1 tablespoon minced peeled fresh ginger
    3. 1 tablespoon low sodium soy sauce
    4. 1 teaspoon sugar
    5. 2 teaspoons hoisin sauce
    6. 1/2 teaspoon salt
    7. 4 cups shredded iceberg lettuce
    8. 3 cups shredded rotisserie cooked boneless skinless chicken breasts
    9. 1 1/2 cups fresh bean sprouts
    10. 1/2 cup chopped green onion
    11. 2 tablespoons chopped roasted cashews
    12. 1 (11 ounce) cans mandarin oranges in light syrup, drained

Directions

  1. Combine first 6 ingredients, stirring well with a whisk.
  2. Combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat.
