Garlic Mashed Potatoes

Ingredients

    1. 4 large garlic cloves, minced
    2. 1 teaspoon salt
    3. 2 lbs idaho potatoes ( 4-5)
    4. 1/2 cup butter, cut in pieces
    5. 2 1/2 tablespoons butter, cut in pieces
    6. 1 cup heavy cream
    7. 1 tablespoon chopped parsley
    8. 1/2 cup dry breadcrumbs
    9. chopped chives, and if desired or sour cream, if desired

Directions

  1. Steam potatoes until tender.
  2. Beat JUST potatoes 'til no lumps remain.
  3. Beat in minced garlic cloves, salt, 1 stick butter, cream, and parsley -- adding liquid gradually and beating 'til creamy.
  4. Spoon into oil-sprayed baking dish. Sprinkle with bread crumbs and dot with remaining butter.
  5. Bake uncovered at 375 degrees for 25 minutes.
