Lentil-Rice Burritos

Ingredients

    1. 1/2 cup brown rice, long grain is best
    2. 3/4 cup dried lentils
    3. 1 small onion, chopped
    4. 1/2 teaspoon basil
    5. 1/4 teaspoon oregano
    6. 1/4 teaspoon garlic powder
    7. 1/4 teaspoon thyme
    8. 3 cups chicken broth

Directions

  1. Combine all ingredients in oven-proof casserole dish.
  2. Cover and bake in 300 degree oven for 2 to 2 1/2 hours.
  3. Add more broth if it starts getting dry.
  4. Serve with flour tortillas, grated cheese, chopped onions, sour cream, etc.
