One of my Mom's recipes that is the ultimate comfort soup on a chilly day. I have no idea where she got the recipe, but remember her singing while she cooked it.

  1. Make meat balls by combining all ingredients.
  2. Chill until firm enough to form into balls.
  3. Saute mushrooms and onions in oil until soft.
  4. Sprinkle with lemon juice, salt, pepper and oregano while cooking.
  5. Heat chicken stock to boiling, add mushrooms and onions and orzo.
  6. Boil 3 minutes.
  7. Add chicken balls and boil until balls float to the top, Turn off heat and combine yolks, cream and cheese.
  8. Blend well and whisk into hot soup.
  9. Adjust seasoning, to taste.
  10. Whisk until serving temperature and serve garnished with chopped parsley.

This soup has a lovely flavor and is quite different from the dishes I usually make. I feel privileged to have tried it. I did omit the orzo, which is hard to find here. I also sort of expected the egg yolk, cream and cheese mixture to thicken the soup a little. Maybe it would have if the starch from the orzo had also been present. None the less, it's delicious. Thank you very much for sharing this recipe with us.
