Zucchini With Walnuts and Chives

Rounds of zucchini take on great texture and flavor when sauteed with seasoned bread crumbs, nuts and chopped fresh chives. This recipe was on the package of organic chives.

Very nice combination of veggies with a bit of gratin crunch. I used half yellow summer squash and half zucchini. I also added quite a bit of black pepper and twice as much garlic. For some reason, I needed more oil than you have posted. Thanks for posting Tasty Buds. Made for Spring PAC 2010.

  1. Slice zucchini into 1/8-inch rounds.
  2. In a large skillet over moderately-high heat, heat olive oil.
  3. Add garlic and zucchini.
  4. Saute until vegetables begin to soften, about 4 minuets.
  5. Sprinkle with chives, walnuts and bread crumbs.
  6. Cook for 1 to 2 minutes for crumbs to adhere.
  7. Turn with a spatula and cook on other side for 2 minutes.
  8. Serve immeadiately.
