  • For zucchini: Sauté garlic and onion.
  • Slice zucchini into thin slices.
  • (Or, slice and quarter if the zucchini is large.) Add zucchini and sauté until zucchini starts to turn transparent.
  • Add creamer and mix.
  • Add sour cream and mix.
  • Add chives and parsley.
  • Mix until everything is heated and sauce thickens.
  • For Orange Roughy: Preheat oven to 350-degree F.
  • Rinse and dry fish.
  • Spray non-stick onto baking sheet and fish.
  • Sprinkle fish lightly with seasoned salt.
  • Sprinkle fish with basil.
  • Bake 10- 15 minutes or until flaky.
  • Serve immediately.
